Which Is the best way to shear with scissor an animal not so quiet?

Hallo ! This year is the First time i shear with hand scissors by myself, i have 8 animals , some of them are quiet and slowly i do It Easy.
With the other i try to close with him in a small catch pen of three meter but sometimes he bite and don t Like ,most of all adults.
I shear It a small Pieces of the back and then stop because the Animals seems nervous.
I would ask, Is Better i shear a Little piece of body every day,Is a good way?the animal day by day could became quiet using this approach? Is better to put the halter and block the Rope on a wood?
Could someone tell me an Ideal approach?
